Our biscuits and tozzetti, made with ‘marroni’ chestnut flour, an Umbrian specialty of Il Negozio di Mamma in Cerreto di Spoleto! What is the difference with classical chestnuts? Marroni are thicker, regular and rounded, with the classic heart shape; chestnuts are smaller, often with a flat and flattened shape, a sign of the struggle they had to do inside the hedgehog to find space. Chestnuts are a little less tasty, even if, when roasted, they always delight adults and children, while chestnuts are more sugary and crunchy, widely used in pastry to be transformed into delicious marron glacé.
