Here is our selection of Valnerina legumes: Castelluccio lentils, of course, but also borlotti beans, chickpeas, puffed spelled and semi-pearled spelled, up to the delizia soup, a mix of various legumes! All grown between Cascia and Norcia, in the Serafini Mara farm.
Why are legumes so important for human health? Legumes contain a large amount of fiber, polyphenols, potassium, and are also very rich in proteins, zinc and iron; just to make a comparison, let’s consider that 100 grams of chickpeas contain 6.2 mg of iron, while a beef steak contains about 2.4 mg. As for cholesterol, legumes (be it chickpeas, peas, beans) do not contain it, while the beef steak itself contains 78 mg. Furthermore, legumes reduce cholesterol levels in the blood, have a good energy power and are among the richest in calcium vegetable foods. On market we can find dried, fresh, frozen and preserved legumes; the best would be to buy dried legumes, even if some have long soaking and cooking times.
